Zucchini Bread by special request

My friend Barbara asked for something that would be easy and nice to take as a thank you to someone. This is my favorite zucchini bread even though it doesn't have any nuts. It's just so good and spicy it doesn't need them. The brown sugar makes it have a wonderful crust. I love it toasted in the morning. Also great for all you people with gardens overflowing with zukes!

Zucchini Bread

1 3/4 cups grated zucchini (about 1 large)
3/4 cup brown sugar
2 tablespoons granulated sugar
2/3 cup vegetable oil
2 eggs
1 1/2 teaspoons vanilla
1 1/2 cups flour
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg (try to use fresh if you can)
1/4 teaspoon ginger
1/8 teaspoon ground cloves

Mix sugars with eggs, oil and vanilla. In another bowl mix flour and the rest of the dry ingredients then add to the egg mixture and mix well then stir in zucchini. Pour into a greased (spray with pam) 9 by 5 loaf pan or 3 small ones. Bake at 350 degrees for about 40-50 min. Cool on a rack.
