This is one of my and Richard's Uncle Lin's favorite things - A Beet Sandwich. I know it sounds weird, but beets are in season now and Acme Bread makes this roasted beet sandwich with goat cheese, watercress and horseradish on their crusty french bread- wish you were here to have one Lin! ; )
Actually, I hate beets and beets hate me. They make me sick and bring up horrible memories. When I was about 9 years old, we went to a restaurant on a summer trip. Previously we always got an extra plate for me and I got a little bit off everybody’s plate. We went into a family style dinner and they had a placard up for a child’s plate 25 cents. I begged and begged to have one and my Dad finally relented. It was turkey and dressing, mashed potatoes and gravy and Harvard beets. I didn’t like the beets and just let them on my plate. My Dad made me eat them (and the horrible juice). His exact words were “Eat them or wear them.” and beets have not crossed my lips for 54 years until Rebecca talked me into eating one bite of a heirloom beet in my salad. The chances of me eating a beet sandwich are like me wining the lotto or admiring Nancy Pelosi.
