Casseroles - Bringing Them Back without the Campbell's!


I'm a big fan of casseroles, just not the typical Campbell's cream of mushroom variety. Really any recipe that has that listed in the ingredients just saute some mushrooms add a little sherry and then some cream and you are good to go. This casserole doesn't call for that, but it's still a favorite. I used Primavera's Green Chili Corn and Cheddar Tamales, but you use what's available, just try to make it one without meat as you don't want to compete with the main part of the casserole. Tamale Pie serves 4 with some leftovers

1 onion chopped
1 red bell pepper chopped
1 clove garlic chopped
1 tablespoon oil
1 pound ground beef
1 15 oz can tomato sauce
1 1/2 cups corn, fresh or frozen
1 teaspoon salt
1 tablespoon chili powder
1 1/2 cups shredded cheddar
about 4 tamales

Saute onion, pepper and garlic in the oil. Add the beef and brown slightly. If too oily, pour off the fat then add the rest except for the cheddar and tamales. Let simmer about 20 min. then taste for flavor. Remove from heat and add cheese and stir to combine and melt. Pour into a casserole dish and split the tamales in half if big (Primavera's are big) with the inside facing up. Bake at 375 degrees for about 30 min. or until bubbly and browned. Serve with a dollop of sour cream and sliced avocados if you like.
