I almost forgot! Easter Desserts!



Just like I almost forgot to take a picture before they were all gone! That's right I made Beignets for Easter too. And little nest cookies -how cute are they? I have to say the beignets were very easy - and how good is hot fried dough with powdered sugar on top! With a cappuccino - that could have been brunch enough.





Beignets makes a ton

3 cups flour
2 tablespoons baking powder
1 teaspoon salt
1/2 cup sugar
1 cup water
1 cup milk
1 egg beaten
ton of vegetable oil
about 1/2 cup powdered sugar
jam - if you really need something else

Mix the dry ingredients in a large bowl and the water, milk and egg in a measuring cup. Add the wet to the dry and mix well. Heat the oil in a large pot (if you are lucky like me you have a fryer) to 325 degrees and drop the batter by tablespoon-fuls into the hot oil turning once until they are brown and crispy - about 7 min - don't crowd them! Remove to a paper towel lined plate and then put on your serving plate and dust with the powdered sugar. If that's not amazing enough for you, serve them with a little bit of jelly on the side. And coffee!!!
