I just love these Enfrijoladas with Eggs in Tomato Sauce. We had traditional BBQ for lunch so for dinner on the 4th of July we celebrated Mexican Independence instead! Had some champagne on a friend's gorgeous roof deck and watched fireworks. Even though it was cold and foggy, it was a perfect night. By the looks of our clothes you would think we were in Alaska!
They were equally as good warmed over this morning.
