Savory Souffle Pancake

Perfect for a rainy Sunday morning. How much will your significant other love you when you deliver this puffy delight to them in bed? If they don't get how great you are at this point - kick them out of that bed!

Savory Souffle Pancake serves 2

3 eggs
1/2 cup half and half
1/4 cup flour
1/4 teaspoon dry mustard powder
2 tablespoons butter melted
1/4 cup grated cheddar or gruyere
few sliced cooked bacon chopped or diced ham
dollop of sour cream (optional)

Preheat the broiler. Separate the eggs. Beat 2 of the yolks into the 1/2 and 1/2 (reserve the other for something else) and then slowly stir in the flour and mustard powder. Next stir in the melted butter and the grated cheese and a dash of salt. Beat the egg whites until they form soft peaks and then fold them into the batter. Heat a 9 inch non-stick frying pan with an ovenproof handle or a cast-iron skillet on the stovetop until it's very hot. Pour in the batter and reduce the heat to low and cook until it is browned on the bottom, about 5 min. Sprinkle over the cooked bacon or ham and place in the oven cooking the top until it is brown but still a little wiggly - you want it to be set but a little soft. Slide onto 1 plate and bring into the bedroom to ohhs and ahhhs. Adapted from Bette's Diner
