Pimentos de padron


I've just discovered these amazing peppers this year and I'm addicted! They also call them "Roulette Peppers" because even though most of them are sweet you can get a crazy random hot one in the bunch. It is simple and delicious.

Pimentos de padron

1/2 lb. pimentos de padron
Olive oil
Maldon Sea Salt - this is a must, it's like a shaved salt with a wonderful flavor and perfect for these

Put about 1/2 inch of oil in a frying pan heat up to medium high and add peppers in one layer. Turn when white blisters form and cook about a total of 3-5 min. Remove to a plate and sprinkle with Maldon salt. Grab a stem and eat the whole thing seeds and all - except for the stem.
