Quick lunch on the deck today. This is Jamie Oliver's recipe for Welsh rarebit basically a fancy English cheese toast. This uses the Pepper Chutney I made earlier but if you didn't do that use another chili chutney.
Welsh Rarebit serves 2
1 egg yolk
1/4 cup creme fraiche
1/2 teaspoon dry mustard powder
2 oz sharp cheddar, shredded
3 tablespoons chutney or chili jam
4 thick slices toasted sourdough bread
Worcestershire Sauce
Mix 1st 4 ingredients. Spread toast with chutney and then top with cheese sauce and put under the broiler until brown and bubbly. Sprinkle worcestershire sauce on top and serve.
