Don't you wish you were a client of mine?


Every year my friend Jennifer and I get together and produce about 40 boxes of a variety of cookies and candies to give away to clients. Believe me it is quite a production line! This is one of the big favorites and is so simple - perfect for someone who wants to do a holiday treat but doesn't really bake - you know who you are! My mom used to do these at christmas but she did little regular pretzels and dyed the chocolate green. I never really liked it dyed as it always made me think they were mint flavored - yuck!

White Chocolate dipped Pretzels

1 package of white chocolate chips (UPDATE - this year I used Ghirardelli White Melting Wafers - and it was perfect! No need for the shortening - melted brilliantly in the microwave and dried quickly!)
2 tablespoons solid vegetable shortening, unflavored like crisco
2 bags of pretzel rods (they are long and a little thick) no laughing please
colored sprinkles

I melt the chips and crisco in a metal bowl set over a little boiling water in a pan (makeshift double-boiler) stirring constantly. When melted dip most of the pretzel to cover - you'll have to kind of paint it up the sides but leave an inch or two for a handle. Lay them in a row on waxed paper and sprinkle with colored sprinkles while wet. Let dry and you're done! Give away to the special people in your life!

Now, this is my peanut brittle, before broken up. Not sharing this recipe - girl's gotta have some secrets... ok, I'll give you a hint - peanut butter!
