Easy Greek dinner from the grill


Making your own hummus is soooo easy! Today I was at Trader Joe's and about to buy hummus when I said, geez, I should just make some - so I did.

Hummus

15 oz can chickpeas, drain and rinse but reserving the liquid
1/3 cup tahini (sesame seed paste)
1 clove garlic
1/4 cup fresh lemon juice
salt
olive oil
smoked paprika

In a food processor put the chickpeas, tahini, garlic & lemon juice and puree. Add a little of the reserved liquid to make it creamy and maybe a couple teaspoons of olive oil. When smooth remove to a serving bowl, drizzle with olive oil and sprinkle with paprika. Serve with carrots or pita chips.

From this my menu evolved into greek pita salad night...

Greek Chicken Pitas serves 2

couple tablespoons olive oil
couple tablespoons lemon juice
1/4 teaspoon each: oregano, garlic powder, dry mustard, cumin, coriander, salt
dash of cayenne
about 6 chicken tenders (or 2 boneless, skinless breasts, sliced)
1/2 cucumber chopped
couple tablespoons plain greek yogurt (it's thicker than regular)
couple mint leaves chopped
couple pitas (or flat bread)
lettuce
couple tablespoons crumbled feta
1 chopped tomato (I didn't have one tonight - bummer!)

Marinate the chicken in the spice mix with the olive oil and lemon juice. Meanwhile mix the cukes with the yogurt, mint and a little salt. Grill the chicken until done and then cut into chunks. Fill the pitas (or flat bread) with chicken, yogurt cuke mix, lettuce, tomatoes and feta. Serve with hummus - and my favorite way with a few french fries - just like in Athens!
